Homemade Choco lava cake without Baking Soda

Most favourite chocolate indulgence of mine is definitely hot choco lava cake. The quick recipe mentioned below comes to my mind whenever I crave for one.

Without much fuss, I am going to the recipe.

Ingredients:

Compound chocolate: 120g (can use dark chocolate also)

Butter: 90g

Powdered sugar: 90g

Eggs: 2 whole

How to make it:

This is a quick recipe and I’m not separating yolks from whites for whisking.

Melt butter and chocolate in a microwave. Don’t forget to stir it in between. ( Can use double boiling method if in stove top)

Whisk the eggs in a bowl and add powdered sugar to it and continue whisking until it is merged well.

Add the molten chocolate butter mixture into the above bowl and whisk again to get a smooth texture.

Now refrigerate this mix for 10 minutes. Meanwhile preheat oven (I’m using OTG here, you can also use microwave in convection mode)

Grease ramekins and pour the mix into it and bake for 10 minutes at 175°C.

Molten choco lava cake is ready!

Note: With the above mix I was able to fill 8 small ramekin moulds and 2 medium sized ones. The picture I have shown above is of the medium sized ramekin.
